Your pizza didn’t rise? Do the panzerotti open when you fry them? When I have to add salt in the focaccia dough?

But above all: the homemade pizza is possible ?!

Learning the right recipe for home-made pizza is possible when professions, like the teachers of the bakery section of èCucina, are humble enough to think about how to adapt their professional recipes, made with mixers and eneorm and performing ovens, to the instruments home. So, of course, the pizza will not come out of the wood oven, but it will be the first homemade pizza that we could call it pizza! A very good pizza made by you! A classic course with a high liking of èCucina in Verona, with pizza, foccaccia and panzerotto as a protagostist! Alessandro Laferza, our expert expert in leavening and mother yeast, will teach us on Wednesday 7,  September at 7.30 pm, in Via XX Settembre, 90.

What will I learn?

During the cooking course the chef will guide you immediately in practice and you will prepare all the dough with him.

Then you will learn:

– choose the suitable flours

– learn the correct technique for kneading pizza

– Because some pizzas make you thirsty!

– how to cook it in the oven at home 

-When to introduce salt

– Because pizza sometimes does not rise

– the correct recipe for the panzerotti

– the focaccias you will not give up anymore!

During the course you wilol make  (and then you will eat):

Pizza with stone ground flour (different toppings)

Focaccia

Focaccia with cold cuts “babà salato”

Turnovers, panzerotti

 

Who teaches

Alessandro Lasferza, bakery chef, head of the bakery, bread and pizza section, of èCucina, professor of the Junior Bakery Academy, trained at the Molino Quaglia Bread Academy and at the Professional Course for Bakers of Castalimenti di Brescia. He loves to teach, he loves to give all the necessary information, he does not fear that your pizza is better than his, you’ll have to stop it!

I pay the same evening? No, for you to find the course well prepared, with the weighed ingredients and all that is needed, in order, èCucina must know exactly the number of participants in time. You can pre-register and then pay within ten days of the course. So you will have your place secured!
