Here is the Basic Course of cuisine of 100% practical  for those who already know how to move a bit in the kitchen but want to deepen the basics of the professional kitchen with a course in 4 lessons: from the first to the second, from meat to fish to get a professional dish.

CYCLE Wednesday: december 4, 11,18 and january 8, 2020 FROM 19.30 TO 22.30  

Nowadays everyone cooks, everyone wants to be a gastonomist, they all have access to millions of recipes thanks to the web. But how many live the true experience of cooking that is not only made of recipes, but above all of experience, techniques, organization and passion?

The objective of the basic course of 4 lessons in a single workingstation is to give the basics of cooking recipes and tricks to start to get into the kitchen autonomously and with satisfaction. Transmitting through the direct experience the essence of the kitchen, the secret that lies beyond a dish not only “good” but from “oooooh!”. So not only the recipe but the technique and knowledge of the chefs.

The basics of professional cooking.

The course takes place in a kitchen with single work stations for up to 9 people. The use of the practical technique, in which the student will execute the recipes from his / her own in a workingstation equipped with pots and ingredients, through the individual work and with the chef, the limited number of participants, allow to measure directly with the material and to have the space to improve.

What do I learn?

  • the classic cutting techniques, the use of the knife and the mise en place in the kitchen
  • the cooking techniques of the meat and the bases of broths,  and sauces
  • techniques of cleaning and cooking fish, filleting a fish
  • the basic crêpes dough, briseè pasta fresh pasta and risotto

N.B: the program may undergo some variation based on the level of the students, the decision of the chefs and the availability of raw materials
