A risotto with a wave, creamy, without butter or cheese? If you are a vegetarian or if you are new to vegetable cooking or you just have an open mind and want to try some vegetarian dishes, then this 100% practical cooking course is perfect for you!

Once, due to the lack of a vegetarian gastromics culture that was really interesting, a risotto without butter or cheese could have seemed an arduous and punitive undertaking. Today it is easier to please everyone with vegetarian dishes, which once we never thought of creating, light, healthy, tasty and even a little spectacular! The risotto can be greedy even just whipping it with a cream of vegetables, or you can try the preparation of a fresh cheese with almond milk, or create our own butter with pumpkin seeds! Open your mind! to create is beautiful!

The course will take place in our kitchen with  single work stations equipped with everything you need! In the practical course, in a single work station, Monday, November 18th at 19.30 “Risotto all’onda vegetarian” under the guidance of Martina Cortelazzo a èCucina In Via XX Settembre, 90 in Verona you will discover new risotto recipes that you can use every day or on special occasions!

Your will actually cook your risotto, in your workstation, under the guidance of the chef.

What is the menu?

here are the three dishes of the vegetarian risotto course:

Pumpkin risotto and miso sauce, creamed with pumpkin seed butter

Risotto with rocket pesto, almond cream, confit tomatoes and walnut oil

Celeriac risotto with ginger oil, lemon, raspberries and pollen (the menu may undergo some variation based on the availability of fresh ingredients)

Who is the teacher?

Martina Cortelazzo is the soul of èCucina, her passion for cooking and teaching come from afar, sociologist and performer in the past life, she nurtured the love for physical work along with the need for creativity and found in cooking the two things! She trained at the Gambero Rosso School in Rome with chef Igles Corelli, Bruno Barbieri, and Andrea Costantini and at the Joia Academy in Milan of chef Pietro Leemann, 1 star Michelin, specializing in high-vegetarian and vergana cuisine. He loves to teach at éCucina and  prefers the students to make their own dishes and so he loves cooking with single work stations.

How do I register?I pay the same evening? No, for you to find the course well prepared, with the weighed ingredients and all that is needed èCucina must know exactly the number of participants in time. You can pre-register and then pay within ten days of the course. So you will have your place secured! Remember that the single work course is limited to 9 places, book early!

The course costs € 80 if you are already enrolled in èCucina (€ 6 six-monthly registration card or € 10 the annual card, to be done in the evening of the course)
