Advanced cooking course 4 lessons: course indicated for those who have already taken one of the previous basic courses or for kitchen experts.

The advanced cooking course

After the basic course do you do much better cooking? Do your friends want to be invited to dinner by you?

Do you want to register for the Masterchef selections ?!

Now you like the dishes you cook, now it’s time to get serious.

An advanced cooking course to start using other ingredients, more complex recipes or simply other classic cooking recipes that are missing. Plus you can improve the aesthetics of the dish and have fun with food design

Feel that you still lack a bit of technique to approach more complex dishes or to invent your own recipes.

The time has come to not lose what you learned in the basic course, but to deepen it and sink the blade!

Here is the advanced course of 100% practical cooking to arrive at a professional dish.

Why

The objective of the advanced course of 4 lessons that will take place both in a single work position (2/3 LESSONS) and in the large kitchen (1/2 LESSONS), depending on the needs, is to give the possibility to those who have already taken a course kitchen base at éCucina in recent years, to deepen and refine its cuisine enriching it with new techniques, recipes and presentation elements of the dish

What do I learn?

In each lesson there will be cooking techniques, vegetables and presentations

The program may undergo some variation of ingredient and recipe at the discretion of the teaching chef.

LESSON: FRESH PASTA, FRESH AUTHOR’S PASTA, GNOCCHI

Raviolo open to Marchesi (presentation exercise)

Fresh pasta with water, orecchiette

Beet gnocchi, gorgonzola fondue, fried leek

LESSON: FISH and presentations

Tuna and salmon appetizer, fruit for the raw

Larded monkfish with pea cream (“points” presentation exercise)

Fillet of red mullet (filleting)

LESSON: MEAT and PRESENTATIONS

Pork fillet in crust

Duck breast with red currant sauce (scalloping presentation exercise and “to the side”)

Braised ossobuco

Guinea fowl breast vacuum cooking

LESSON MENU AND PRESENTATION

The dishes of a menu, with the recipes provided by the chef, will be performed in the last lesson as an organized kitchen brigade in which the mise en place of the ingredients is prepared, cooked and served.

How do I sign up?

I pay the same evening? No, to make you find the course well prepared, with the weighed ingredients and everything you need èCucina must know exactly the number of participants in time. You can pre-register and then pay within ten days of the course. So you will have your place fixed! Remember that the course in a single work station is limited to 9 places, book early!
