Do you know the satisfaction of making the homemade pie with fresh egg pasta, and, since we are there, even the perfect ravioli and tortelli ?! And the fish lasagna?

Put the sea in the lasagna!

We often know very well the technique for classic lasagna but we lack the basics to make a fish lasagna, greedy and fragrant in Venetian style!

Then if we teacher is a sweet, patient and professional chef like Luca Fasoli, we are really lucky! All this at èCucina, in Via xx Settembre, 90 in Verona, Whednesday april 3  at 7.30 pm.

You will learn how to knead, work and stuff fresh stuffed pasta with different fillings. What is the perfect lasagna? A thinly sliced ​​lasagna, a soft béchamel with the right consistency, a juicy and not too dry ragout and lots of Parmesan cheese! from the dough to the tasting!

What will you learn?

The course is practical so you will try your pasta dough egg, from dough to fillings and forming. You will learn:    

 knead the fresh egg pasta by hand     

doses, different recipes of fresh egg pasta     

roll out the dough with the dough sheeter    

 to understand the characteristics of the dumplings for ravioli and tortelli from which you can invent your own!   

  to prepare a perfect fish  sauce for lasagna   

  to create a béchamel with the right consistency for the baked lasagna   

  to compose a greedy and dripping lasagna!    

 to eat lots of carbohydrates one evening! (Only for this time!)

Who teaches

 

Luca Fasoli is in the staff of is kitchen from the beginning. Luca is a chef who has a great knowledge of the world of meat. Ten years ago he grew the school with his extensive knowledge of cooking and teaching experience. His recipes are transmitted with the calm that distinguishes him and the desire to show to the students the most correct methodologies and without shortcuts that lead to a quality dish. His international training led him to be used in many recipes in other countries of the world.
